Amylases starch is a polymer of glucose molecule linked with glycosidic linkage. It comes in two forms, i.e amylose and amylopectin. Here amylose shows a linear structure of glucose units linked together by glycosidic bonds to form a helical structure. It is one of the two components of starch, making up approximately 20 - 30%.
